Can I connect this directly to the brass Y adapter I use for attaching a second hose?

Yes, that is exactly how I connect mine. I set my pressure to 50 psi. and have no problems. When boondocking I lower my pressure so as not to use to much water and fill my tanks to fast.

Why would some overnight no water use cause gauge to read 80psi when set on 45psi flow?

If flow pressure is set at 45 static pressure will be higher.

I have never used one. Do you have to keep going in and out while you adjust?

When you get the regulator you set the pressure to what you want, normally 50psi. Once set you do not need to change. I se mine on input pressures varying from 50 psi to 210 psi and never have to adjust it.

Will this unit work if the whole assembly is mounted upside down?

Mine is working fine with the inlet down and the outlet up; I don't think orientation has any effect on the regulator's function.

Has anyone experienced higher static (water flow is 0) pressure >45psig?

Yes. Pressure will also fluctuate.

Can this reduce pressure to 5-8 psi, in order to fill chicken watering cups?

I an not sure how accurately this regulator would be at that low of pressure. This may not be the correct product for your application, I have a watering bowl (16-20 oz.capacity) with a float installed to maintain a level of fresh water at all times. It also comes with a 3' stainless steel braided hose and is originally designed for dogs and horses but I'm sure that i would work for chickens and it operates at normal household pressure.
