Could the 1 1/2 inch nail be used to attach tongue and groove boards over existing dry wall?

You could use them to face nail the boards. I would not use them to nail into tongue as nail head would be too big and prevent the tongue & groove from joining.

Are these nails hardened?

No, they are not hardened. The hardened nails are mostly specific flooring nails.

Could I use these for face nailing wide wood plank flooring. Or would they walk out, popping/cracking polyurethane I plan on finishing on top?

The nails would be hard to set below the surface. The 'rosehead' protrudes making it difficult to set in wood. I would not use them for this application.

Are these galvanized?

No, they are not galvanized or stainless steel.
