How replayable is this? Is it a one-and-done, or will it hold up to many replays?

The game has a few various boards to mix things up a bit so each play is a bit different. This alone wouldn't be much different but they also included some boards which are part of a campaign which also has some nice looking comics that tell a bit of a story and use specific boards and pieces for it. I'd guess that after that campaign it would still be fun to pull it out from time to time.

What size sleeves are needed for the cards?

There are no cards to sleeve for this game. It's all cardboard.

How did it play with more than one person? Is it as fun as the solo version?

Under Falling Skies is a solo-only game. There is no option in the rules to play with more than one person. You could play together with someone, if you want to problem-solve the solo game together, I suppose...
