We use 304 for the interior surface and 430 for the exterior. The 430 on the outside allows the pan to work well for induction.

Every nonstick skillet I ever purchased raises up in the middle after some use, leaving a pool of oil on the outside 2". Does this one?

Have been using this for about 6 months now and it has not done that. It is our favorite pan as well so it gets used a lot.

11 Inch Hexagon Surface Hybrid Stainless Steel Frying Pan

The Cooksy 11 Inch Hex Surface Hybrid Stainless Steel Frying Pan is a great addition to your kitchen. It features even heat distribution and superior cooking of stainless steel with the easy cleanup of non-stick. The non-stick coating, Eterna by Whitford, is among the longest lasting and most durable coatings available for frying pans. It also works well with induction cooktop, gas, ceramic, and electric. Although it is designed in the US, it is manufactured in China and shipped from the US. The 9 inch pan currently does not come with a lid, but a version with a lid will be available later this year. The handle is included in the pan's cost, and the non-stick coating prevents the raised-middle issue that some non-stick skillets have.
