It is a dry cheese but I would not buy from this seller. It was not package properly and was spoiled by the time it reached me. I had to throw away without a refund.

Probably. But I think you may want pot cheese.

What is the expiration date of this refrigerated item? How long until its freshness/edibility 'expires'?

Several months if you keep in a refrigerator. Over a year if you keep in a freezer.

What is sodium level?

Just put it in the refrigerator over night.

How do you defrost it once frozen?

I don't thinks that it has to be frozen. It's will be the same if you are going to frizz a milk

Can you freeze this cheese?

Yes you can. I was looking for a Dry cheese and it is not!
