Do these bars have the seeds in them?

No. Not that we have noticed. My kids LOVE them.

It’s says 40 count in the description but the box says 8 count in the picture. Which is it?

This is for (5) boxes that contain 8-bars each, so the total count of bars will be 40

Will the five boxes have enough of a shelf life for about two months? What time period can I expect?

I do not know the full shelf life. I have had mine for three months (two boxes left) and they are still excellent. The seal on the 'bar' wrapping is very good.
