Can I hook up 2 marine batteries ( to maintain) to one solar panel?

Not that it has much to do with this product, yes you can hook up two batteries to one solar panel. The parallel or series connected voltage of the batteries needs to be matched to the designed output of the solar panel and you probably need a controller to prevent overcharge of the batteries. Don't get in the garden hose to fill a swimming pool mode though, trying to charge and maintain your batteries with a small panel as the self-discharge of the batteries can use up much of the power a small panel can produce. If your panel is on the smaller side, one battery may be all you need (or can adequately charge).

My cable is black only, so can I adapt wrongly?

As long as you know the positive and negative polarity of the wire, you can connect them. For our wires, red is the positive pole and black is the negative pole.

Is this product waterproof? I want to use this to connect to the solar panel outside.

I would say water-resistant. Connectors themselves are not waterproof. Also not certain if insulation is UV rated for outside use. I feel this is a more temporary usage extender or indoor/inside shed use.

What do I do if the polarity adaptor wasn't included in the package with the order?

I suggest returning it for replacement. I have a few lengths of this cable and hadn't needed a polarity change until a different cable had a reverse polarity. I have two of these 'other' cables, one straight, one reversed, with the same part number from an electronics hobby vendor. Thus, I unexpectedly had to use a polarity reversal. So, I recommend returning to get another delivery in order to get the adaptor in case you need it.
