The product comes from Cafe du Monde, which is a coffee shop in New Orleans, they serve coffee and Beignets, The description says best serve with their chicory coffee, the product is actually a donut like mix for beignets which is like fried dough.

Do you have to make all of it at once or does it come with measurements for less portions (e.i., pancakes)?

You do not have to make all of it at one time. It doesn't come with instructions on how to make pancakes with the beignet mix.

Can the dough be prepared & refrigerated the night before I plan on frying for a Mimosa brunch?

I'm not sure, I think the texture would change.
