Why is there such a heavy oil smell? What is this material and why is it on a food product?

There should not be any oil smell at all. I would guess that the manufacturer coated it in protective oil for shipping. My thought would be to wash the whole unit with soap and warm water- which is what I do before I first use anything having to deal with food.

Is there a place to get additional hardware? One of the bolts was missing when my wife purchased it.

Made in China - good luck finding parts, esp the aluminum trays. I sent mine back because I could see nothing of a headache as you’re experiencing. Good iron work though.

No, this item doesn't come with a splash guard.

Does it include a dicer? The picture seems to have a diced onion in it, but i do not see any mention of the dicer.

What upgrades are included in the “upgraded” version?

I'm not sure, but this juicer is not a great product. I had to return it because the strainer holes are too big and let through too much pulp and my wife could not push the plunger down. It takes a lot of strength to depress. On top of that, the supplier promised a gift to make up for my trouble, but never followed up. I wanted to look this item, but it simply didn't work for us.
