Actually this would be a great mat to use and a smart way to be able to pull them off of the pan without worrying about the sticky mess that occurs when you are using a plain pan, even parchment paper won't give you the results this silicone mat will. You should have a beautiful product.

Can I trim the edges so that it lays flat in the baking sheet?

I personally haven't had to do that, but I don't see that it would affect any items that you are baking.

I've used these for a few months now. They seem to work fine but they always seem to feel greasy. Anyone else having that problem?

I haven't had that problem. After use I wash in hot soapy water and air dry. When mine were new they had a sticky feel to them but worked great.
