I’ve had mine through the summer and winter and I haven’t noticed any changes. Seem to be holding up well.

To be honest, I would say no they are not dog-proof. They could chew the polyurethane just like they would with wood.

Is there any split top covers?

We do not have a 2 piece cap. However, there is an instructional video at www.nextstone.com which will show you how to cut the 1 piece cap into 2 pieces for a pre-existing post.

How much does the color vary from lot to lot on these items?

There has not been any variation in color between lots for the Brunswick Brown.

So to cover a 6x6 post, would I need two sets to make a square?

No, one box has the two pieces you need to cover one single post. This particular post covers a nominal 6x6 (which is a 5 1/2 x 5 1/2) post. It does not cover a "true" 6x6.
