Can Fibaro Relay 1 switch 2.5kw be used for on/off a water heater (immersion), in parallel to the manual on/off switch, assuming load is less than 2.5kw?

Yes, it can be used for this purpose. Please ensure the physical switch used is also rated for 2.5kw/10A

Does it work with LED lights without a bypass? Each line has 2 to 9 spot lights.

The switch does not require a bypass. The bypass is only needed if you use the dimmer module and the load is low
