This heater is perfect for 5 gallon. It holds the temp very well, even in chilly conditions.

Will this be okay for a 2.5 gallon tank for a betta?

I would be worried to put it in such a small tank.

Will this heater burn itself out if not submersed in water? I want to place this in a fireplace to create a little updraft.

It will shut off, it has overheat protection to avoid it not being on when not in water. Use proper equipment instead.

The light goes on only when it need to heat. Additionally there is built-in delay. It is best to test the temperature of the water after a day and then adjust upwards if needed.
